Roasted sweet potatoes are one of my absolute favorite ways to enjoy vegetables. They turn out with a deep orange glow, a naturally creamy bite, and a rich, caramel-like sweetness that makes them hard to resist.

There are so many ways to use sweet potatoes (and yams). You can mash them, blend them into soups, cube and roast them for salads or pasta dishes, and much more. They’re also packed with fiber and beta-carotene, which means they’re not just delicious but also nutritious.

A Recipe That Went Viral

The method I’m sharing originally became hugely popular when I first posted it in Hebrew a couple of months ago. This simple vegetable transforms in the oven into something soft and almost melting inside, with crispy, caramelized edges that are incredibly addictive.

It gained over 360,000 views on Facebook, more than 50,000 on YouTube and Instagram each, and I also received thousands of photos from people who tried it and said it was the best sweet potato dish they had ever made.

What Makes This Version Special

Most people bake sweet potatoes whole, and they come out good that way. When sliced or diced, the crispy parts are often the most enjoyable. This method combines both approaches.

By cutting the sweet potatoes lengthwise in half, the cut side makes direct contact with the hot baking tray, allowing maximum caramelization and crisping.

As they bake, their natural sugars slowly release, turning golden and forming a beautifully crisp surface.

The Key Ingredient: Oil

The secret behind that crackly, almost brûlée-like crust is using enough oil. You need to coat both the baking tray and the exposed cut side of the sweet potatoes generously. The oil helps transfer heat and encourages browning.

I used olive oil, but coconut oil or rich fats like ghee also work very well and create excellent flavor and texture.

Simple Seasoning Approach

For seasoning, I kept things minimal with kosher salt and fresh thyme. The herbs add a subtle aroma without overpowering the natural sweetness.

If you prefer, you can skip the thyme or swap it for rosemary, sage, or oregano. Dried herbs also work well. A pinch of chili flakes can be added if you want a bit of heat.

Baking Time and Patience

Cooking time can vary depending on your oven and the size of the sweet potatoes. To achieve the crispy edges, you may need to extend the baking slightly.

I usually start checking around the 35-minute mark, but be careful when opening the oven because of the hot steam.

Finishing Touch and Texture

After removing the tray from the oven, let the sweet potatoes rest for about five minutes. During this time, they absorb some of the oil and become even richer and more flavorful when flipped over.

This dish is indulgent rather than “light,” but that’s part of what makes it so satisfying.

Variations and Flexibility

This technique works with different sizes of sweet potatoes. Smaller ones can be roasted whole or halved, while larger ones may be better cut into quarters. Baking times will need adjustment accordingly.

It also works with purple and white sweet potatoes, as well as yams.

Beyond sweet potatoes, the same roasting method can be applied to many hearty vegetables such as regular potatoes, beets, fennel, sunchokes, kohlrabi, carrots, and eggplant.

Making a Larger Batch

Like many roasted vegetable dishes, these tend to disappear quickly once served. If you double the recipe and use two trays, it’s best to switch their positions halfway through cooking to ensure even roasting.

How to Serve

These roasted sweet potatoes are delicious on their own, but you can also serve them with sour cream, labneh, or crème fraîche. Fresh pesto or herb-based sauces also pair nicely and add a bright contrast to the richness.

Desert Pavement: A Unique Wind-Formed Landscape

Aeolian landforms are natural features created by the action of wind on the Earth’s surface. These formations result from processes such as erosion, transportation, and the deposition of materials by moving air. Similar wind-related processes have also been observed and studied on other planets.
